Pat is a a retired special education teacher. Prior to teaching, she was a drug and alcohol counselor. She is currently the owner of Stardust Skate along with her son and daughter-in-law. She loves spending time rhinestoning figure skating dresses. She also enjoys baking, cooking, and spending time with her friends and family. Pat has been in love with figure skating since she was a child. Her hope for the club is to increase awareness of skating in the community.
Erin Ferguson lives in Nazareth with her two little girls, husband, dog Shelby, and silly cats Hubie and Salem. She loves entertaining her friends and family, cooking, baking, new adventures, traveling, the great outdoors, holidays, sports, and showing her kids the magic of the world. She graduated with her degree in Event Planning/Meeting Management with a focus on marketing and branding in 2013. After deciding to have children, she took a step back from that field and started taking classes at NYU in creative writing. Most recently, 2023, her love for sports led her into the field of personal training. Erin is a freelance entertainment journalist, a marketing/branding manager, a children’s book author, a certified children’s yoga teacher, a youth sports coach, she runs a cheerleading clinic, and is a certified personal trainer. She has sat on a few boards in the past and is now the VP of the Penguin Figure Skating Club…..of all the hats she wears, however, her favorite job is being a Mom, and she is excited to serve you and your families as one of our board members.
Jessica is a proud mom who embraces the joyful chaos of raising two wonderful children actively involved in various sports programs. She enjoys connecting with other moms who share similar experiences of the highs, lows, and craziness of parenthood and sports involvement.
As a dedicated board member, Jessica is committed to advancing the mission of the Penguin Figure Skating Club to empower skaters to achieve their goals within the sport of figure skating. In addition, she hopes to help provide skaters and families with opportunities to create lifelong friendships and fond memories of being a PFSC member.
Rachel lives in Allentown with her daughters, husband, 2 cats , dog and turtle.
Rachel is a Licensed Professional Counselor in the Lehigh Valley where she counsels children through adults with a variety of mental health disorders.
Besides watching her daughters skate, she is active in her local youth softball program board and coaches a competitive travel softball team. Rachel loves to run, play sports, spend time with family and go to concerts. She looks forward to helping the club be as successful as ever!
Beth Fallacaro lives in Lower Saucon with her husband two kids and dog. When she’s not at the rink with her daughter for figure skating or with her son for ice hockey, you may find her enjoying time at her lake house hosting family and friends and maybe even with a good book. In between driving her kids to and from sports she loves traveling all over the world with her family. Beth graduated Cornell University with her masters in industrial and labor relations and has worked as an HR professional for a fashion retail companies ever since. She’s involved in various clubs and organizations with her kids and job and is very excited to be supporting the fundraising efforts this year for the Penguin Figure Skating Club.
Emily Brennan is a dedicated faculty member at Freedom High School. Her son, Flynn, is excited to start his third season with the Phantom Youth, where her husband, Jason, is an assistant coach. Her daughter, Norah, has been skating since she was 5 and loves every moment on the ice.
Emily graduated from Johnson and Wales University and spent ten years in the hospitality industry. She then became the Events Manager for the ESU Foundation at East Stroudsburg University, planning and running events.
Erin Grubbs is a mother of three children, who call Steel Ice their home rink. Her daughter has figure skated as a part of the Penguin Figure Skating Club for several years, her sons have been a part of the Phantoms youth hockey organization, and her husband is a part of the Geezer hockey league. Erin has supported many of the youth teams and organizations that her children have been a part of, most recently serving as Secretary of the LV Youth Phantoms Board.
Erin also has a background in marketing and managing teams. Currently, as Head of Marketing at GoReact, an education technology company, Erin is responsible for managing the Marketing team with a focus on creating marketing strategies and integrated campaigns to drive revenue and build brand awareness. Erin has a Bachelor of Science in Business from Lock Haven University and a Masters of Arts in Integrated Marketing from West Virginia University. When’s she’s not at the rink, Erin enjoys spending time outdoors with her family, reading, swimming, and running.
